Anyone who has owned a single-bowl chopper knows the problem, and it is the reason most of them end up in a cupboard. You chop garlic for the sabzi. Then you want to chop something for a salad, or whisk cream, or make a chutney — and you have to stop, take the blade out, wash the bowl, wash the blade, dry both, and reassemble. Which takes longer than chopping by hand would have done, so next time you reach for a knife instead. A second bowl removes that entirely. Onion and garlic live in one, everything else in the other, and you swap rather than wash mid-cooking. Better still, the bowls take the lid and go straight into the fridge, so chopped onion for tomorrow does not need transferring into yet another container. It is a small piece of design and it is the difference between a chopper that gets used every day and one that does not.
The whisker disc — a second machine in the box
A chopping blade and a whisking disc do opposite jobs, and it is worth understanding why the disc is there. A blade cuts through food; a disc pushes air into it. Swap the blade for the whisker disc and the same motor stops chopping and starts aerating — which is what you need for a frothy batter, whipped cream, mousse, mayonnaise, beaten eggs, cocktails and even churning butter. Those are jobs most people either do by hand with a whisk, which is slow and tiring, or skip entirely. Two practical notes: use the disc rather than the blade for anything you want light and aerated, since a blade will cut air bubbles rather than build them; and mayonnaise in particular wants a slow, steady addition of oil rather than everything at once, so use short bursts and add gradually.
Push-start — and how to get an even chop rather than a paste
The commonest complaint about any chopper is that it turns onion into a watery paste rather than a neat dice, and that is almost always technique rather than the machine. Push-start operation is what gives you the control to avoid it: the motor runs only while you hold the button, so you work in short bursts rather than one continuous run. Two or three one-second presses will give you a coarse chop; six or seven a fine one; hold it down for ten seconds and you have a purée. Cut ingredients into rough pieces of roughly equal size before they go in, do not overfill past the marked level, and stop to look between bursts rather than after. The other advantage of a hold-to-run button is safety — it cannot be left running unattended, and it stops the instant you let go.
