The single most important thing to understand about any commercial ice machine: the headline production figure is a rated capacity, measured under standard test conditions. It is not a promise of output in your kitchen. Ice-making is a refrigeration process, and how much ice a machine makes depends on the temperature of the air it is rejecting heat into and the temperature of the water it is freezing. A machine placed beside a tandoor or a range, in an unventilated corner, or in a kitchen running at 38–40°C in May, will produce less than its rated figureand it will produce least on exactly the days you need most. Site it in the coolest, best-ventilated position you can, ideally back-of-house or in a service area rather than on the hot line.
