The single most important thing to understand about any commercial ice machine: the headline production figure is a rated capacity, measured under standard test conditions. It is not a promise of output in your kitchen. Ice-making is a refrigeration process, and how much ice a machine makes depends on the temperature of the air it is rejecting heat into and the temperature of the water it is freezing. A machine placed beside a tandoor or a range, in an unventilated corner, or in a kitchen running at 38–40°C in May, will produce less than its rated figure — and it will produce least on exactly the days you need most. Site it in the coolest, best-ventilated position you can, ideally back-of-house or in a service area rather than on the hot line. Why the 42 kg bin matters as much as the production figure
Production and storage do two different jobs, and buyers often look only at the first. Production is a rate — ice made steadily across the day. Demand is not steady: a restaurant's ice goes out in bursts during the lunch rush and the pre-dinner drinks period, far faster than any machine can make it in the moment. The storage bin is what bridges that gap. It accumulates ice through the quiet hours between services and holds it, insulated, so it is all available at once when the rush comes. A machine with high production and a small bin will still run dry in a peak. When you compare machines, compare both numbers — and think about your own demand pattern rather than your daily total. Many establishments also run the machine overnight so the bin is full when doors open.
Air-cooled and 15 g square cubes — two choices worth understanding
Air-cooled means the machine rejects its heat into the surrounding air through a condenser and fan. The alternative, water-cooled, carries heat away in a separate water circuit — which needs a dedicated supply line and a drain for the warm discharge, on top of the ice-making water. In most Indian commercial kitchens that plumbing simply isn't there, and adding it is expensive. Air-cooled needs power, a water supply and clearance for airflow, which is why it is the practical choice for a bar, café or service area. The trade is that it depends on the room being reasonably cool and ventilated. On the ice itself: a solid 15 g square cube has less surface area for its weight than a hollow or irregular cube, so it melts more slowly and dilutes a drink less — which is why square ice is the bar format.
