Lighting it properly — and what not to use
The single best way to light charcoal is a chimney starter: fill it, put newspaper or a natural firelighter underneath, and let it draw. The chimney effect gets a full bed glowing in fifteen to twenty minutes with nothing added to the fuel. Never use petrol, kerosene, diesel, thinner or spirit to light or revive a fire. These flash violently, can flare back at you, and leave a residue that goes straight into your food. People are seriously burned this way every season, most often by pouring fuel onto coals that are already lit. Wait for the coals to develop a light grey ash coating before you start cooking — flames and black coals mean the fuel is still burning off and food cooked then tastes of smoke rather than of itself. Spread the bed with a bit of open grate at one side so you have somewhere cooler to move food to.
