A hand blender does not struggle with soup. It struggles the moment the mixture thickens — a dense tomato purée, a thick dal, an idli or dosa batter, mashed potato. What happens then is that the blade slows against the resistance, the motor draws harder, and on an underpowered machine you feel it labouring and hear the pitch drop. That is where 350 W separates itself from the 200 W class, and where the turbo button earns its place: a short surge of extra power gets a stalling blade moving again through a thick mixture instead of leaving you to stir it loose by hand. The way to use it is in bursts of a few seconds when you hit resistance, not as a default setting — running a small motor flat out continuously is what overheats it. Positive locking — a detachable arm that stays attached
A detachable arm is genuinely useful: only the steel shaft goes under the tap, and the motor body stays dry. But detachable joints have a failure mode worth understanding, which is working loose during use. Blending torque acts as a twisting force on that joint, and on a simple push-fit the arm can unseat while running — at best it stops blending, at worst a live motor body is separating from an arm buried in hot dal. A positive locking system means the arm clicks into a definite locked position rather than merely pushing on, so it cannot loosen under load. Two habits to go with it. Feel for the click every time you fit the arm, rather than assuming it seated. And unplug before locking or unlocking it — never twist the arm off a machine that is still connected to the mains.
Getting it right — depth, angle and the splash problem
Hand blenders have a reputation for redecorating kitchens, and it is technique rather than the machine. Submerge the blade guard fully before switching on and switch off before lifting it out — a spinning blade breaking the surface is exactly what throws gravy across the counter, and turbo makes that worse rather than better. Use a tall narrow vessel where you can; depth contains splash and circulates food better than a wide shallow pan. Tilt slightly and move slowly around the vessel rather than holding still, which draws food down into the blade instead of letting it spin in a hollow. Take the pan off the flame first — melting the guard against a hot base is an easy mistake to make once. And with a 350 W motor in particular, work in bursts and let it rest: more power means more heat, and small motors do not shed it quickly.
