FFDgas off, automatically
The most dangerous thing a gas hob can do is keep releasing gas after the flame has gone out. It happens easily — milk boils over, a pan of dal spills, a draught from an open window catches a low simmer — and if nobody is standing there, gas fills the kitchen unnoticed. The Flame Failure Device is a sensor at each burner that detects the flame is gone and shuts off the gas supply automatically. It's the single most important safety feature on any hob, it isn't standard at every price, and in a home with children, elderly parents or simply a busy kitchen it's the reason to choose one hob over another.
3.8 kW triple ring — the burner Indian cooking actually needs
Most four-burner hobs give you one large burner and three small ones, and the large one still isn't large enough for a full-size kadhai. This one carries a 3.8 kW triple-ring wok burner, and the three rings matter as much as the power: the outer rings deliver intense flame across a wide area, so heat reaches the sloping sides of a wok or kadhai rather than concentrating in a small circle at the base — which is exactly what biryani, deep frying and bhuna require. The inner ring gives precise simmer control on the same burner, so it also handles a slow-cooked gravy. One burner covering both extremes is what makes a hob genuinely usable.
Brass burners, cast iron supports, 8 mm glass
Three material choices that decide how this looks and works in year five. Brass burners distribute heat faster and more evenly than aluminium, use gas more efficiently, and — because brass resists corrosion from spills and heat cycling — last far longer before the flame ports distort. Enamel-coated cast iron pan supports hold a heavy pressure cooker or a loaded kadhai without wobbling, which lighter supports do. And 8 mm bevelled toughened glass is thick enough to take heavy vessels being set down on it, resists scratches, and wipes clean rather than staining.
