Every other coffee machine makes you pick a side on milk, and each side costs you something. An automatic carafe system gives dense, consistent foam at one touch with no skill at all — which is exactly right on a weekday morning, or when someone else in the house wants a cappuccino and has no interest in learning. But it cannot produce the fine, wet, glossy microfoam that latte art is poured with; it makes foam, not texture. An open steam wand can do that, and rewards practice enormously — but it takes technique, and on a rushed Tuesday it is one more thing standing between you and leaving the house. This machine has both, fitted. LatteCrema Hot for convenience, My LatteArt manual wand for craft, and you decide per drink which one you feel like using. That is genuinely unusual, and it is the single clearest reason this sits at the top of the range rather than the Opera.
PID control and five temperature profiles — what that actually buys you
A basic machine controls temperature the way an old geyser does: heat until too hot, switch off, cool until too cold, switch on again. The water is on average about right and almost never actually right. A PID controller works differently — it measures continuously and anticipates, easing the heat up as it approaches the target instead of overshooting and correcting. The result is a genuinely stable brewing temperature rather than one that drifts through the shot. The five infusion profiles are what you do with that stability. Different beans want different temperatures: a dark, oily roast is already close to bitter and extracts better slightly cooler, while a light, dense, fruity roast needs more heat to give up its flavour and tastes thin and sour without it. On most machines you have no say in this at all. Here it is a setting — which, combined with 15 grind steps, is the difference between adjusting your coffee and merely hoping.
