Coffee begins losing aroma within minutes of grinding, which is why pre-ground coffee — however good the beans were — never tastes like a café. A direct bean-to-cup machine grinds immediately before brewing, so what reaches the cup still carries the aroma, flavour and crema the roaster intended. Combine that with 15 bar of pump pressure for proper extraction and you get espresso that genuinely resembles a bar's — not an approximation of one.
