Swapping a hopper sounds like a compromise next to a machine that runs two at once, and for a busy household it is. But there is a real argument the other way, and it is about the beans rather than the machine. Coffee beans go stale through contact with air. A hopper permanently fitted to a machine is open to the brewing system and gets opened every time you top it up — so a second coffee you only drink occasionally sits there slowly losing its aromatics for weeks. With interchangeable hoppers, the one you are not using comes off the machine complete with its lid and its beans, and goes in the cupboard sealed. Your weekend single-origin is still fresh next Saturday, and your decaf is still decent a month later. A removable brew unit — the spec that decides year five
The brew unit is the mechanism that holds the ground coffee, compresses it and pushes water through it, and it is where oil and residue accumulate on every automatic machine. Machines split into two camps here and almost nobody explains the difference at the point of sale. Sealed units can only be cleaned by the machine's own automatic cycles — which work, until they don't, at which point servicing means a technician. A removable brew unit slides out in one piece so you can rinse it under a tap, look at it, and put it back. Doing that once a week takes about a minute and removes the coffee oils that automatic rinsing leaves behind, which are what eventually cause stiff mechanisms and stale-tasting coffee.
