This is the single most important thing to understand about this cooktop, and it is the reason to choose it over an induction plate. Induction works by creating a magnetic field, which means it only heats cookware containing iron β your steel patila may work, your aluminium kadhai will not, your brass and copper vessels will not, and most old family cookware will not. People discover this after buying, and then spend more replacing utensils than they spent on the cooktop. Infrared heats the surface directly instead, and the pan sits on that heat exactly as it would on a gas flame. So aluminium, brass, glass, ceramic, earthenware, cast iron and non-stick all work, and the only requirement is a flat base making good contact. If you have a kitchen full of vessels you like, this is the technology that lets you keep them. The trade-off is honest: induction is more energy-efficient, and an infrared surface stays hot after switch-off.
The grill rack β indoor tikka without a separate appliance
The grill rack in the box turns this into two appliances, and it is genuinely the thing that distinguishes it from an ordinary hot plate. Because infrared radiates heat upward from the surface rather than only conducting into a pan base, food placed on the rack cooks from below the way it does over coals β which is why paneer tikka, kebabs, grilled vegetables, sandwiches and light roasting all work on it. For a flat in a society where an open barbecue is not practical, that covers most of what people actually want a barbecue for. Three practical notes. Grilling produces smoke and cooking smell, so run the chimney or open a window β this is not a low-odour way to cook. Marinade and fat will drip onto the glass, so wipe it once cooled rather than letting it bake on. And grilling is slower than a coal tandoor; the flavour is closer to an oven grill than to a charcoal one.
Residual heat β the one habit this cooktop demands
An infrared cooktop heats its own surface, and that surface stays dangerously hot for several minutes after the power is off. This is the practical difference from induction, where the plate itself stays relatively cool because only the pan heats up, and it is worth adapting to deliberately. Treat the glass exactly as you would a gas burner that was on a minute ago: do not touch it, do not set anything on it, and do not let a child near it just because the display is dark. Two further things follow. Never pour water onto hot glass or put a wet cloth on it β thermal shock cracks crystal glass, and a cracked plate is not a warranty matter. And clean it only once fully cooled, which is also when spills lift off most easily. Used with that one habit, the glass surface is the easiest cooking surface in any kitchen to keep clean β one wipe, no burner grates, no gas rings.
