The thing that confuses people about an egg boiler is that there is no timer and no dial for doneness, and it looks like something is missing. Nothing is. The water is the timer. You pour a measured quantity into the heating plate, and the machine steams the eggs until that water has completely evaporated — at which point it switches itself off. Less water means less steaming time and a soft yolk; more water means longer and a hard one. The supplied measuring cup is marked for the three levels, so you fill to the line you want rather than judging by eye. Two things follow from this. First, it is genuinely repeatable — the same measure gives the same egg every morning, which boiling in a pan never quite does. Second, the measure is calibrated for a full tray, so fewer eggs cook slightly harder than the marking suggests; take a little water off when you are doing two or three.
Steamed, not boiled — and why they peel more easily
Despite the name, this does not boil eggs. It steams them, and that difference is worth knowing because it explains the two things people notice first. Steamed eggs are markedly easier to peel than pan-boiled ones. Steam penetrates the shell quickly and helps separate the membrane from the white, so the shell tends to come away in large pieces rather than taking half the egg with it. And eggs are far less likely to crack, because they sit still in a tray rather than knocking against each other and the base of a rattling pan. Two things that help further: pierce the wide end of each egg with the pin usually built into the measuring cup, which lets the air pocket expand instead of splitting the shell, and drop them into cold water for a minute afterwards to stop the cooking and loosen the shell further.
The poaching cup — a poached egg without the pan of swirling water
Poaching is the one egg preparation most people give up on, and reasonably so: a pan of barely simmering water, a splash of vinegar, a swirl, and a fair chance of a ragged mess or a broken yolk. The poaching cup sidesteps all of it. Crack the egg into the cup, place it in the tray, and let the same steam cook it in a contained shape. The result is closer to a shaped, steamed egg than a classic poached one — the texture is a little firmer and the edges neater rather than feathered — but it comes out the same way every time, with no oil, no butter and nothing to skim. Lightly grease the cup first if you want it to release cleanly, and expect to adjust the water measure once or twice to find the yolk consistency you like. One cup is supplied, so it is one poached egg at a time.

Keep the measuring cup with the machine. It is the only way to set doneness accurately, and it is the part most likely to end up in the wrong drawer — replacing it is not straightforward.
