Paper filters are the quiet ongoing cost of owning a drip coffee machine, and they are worth thinking about before you buy rather than after. One per brew, every day, bought in packs you have to remember to replace — and the morning you run out is the morning the machine is useless. In India there is a second problem: the right size for a given machine is not always easy to find locally, so people end up ordering them online or cutting larger ones down. A reusable nylon filter removes all of that. You rinse it, and it goes back in. There is a genuine trade-off worth knowing: paper traps more of the coffee oils, so a nylon filter gives you a fuller-bodied, slightly heavier cup where paper gives a cleaner, brighter one. Which is better is a matter of taste rather than quality — but if you prefer the paper result you can still use one in the basket.
The anti-drip system — for the first cup before the pot is done
A drip machine brews into the carafe over several minutes, and the temptation on a slow morning is to pull the carafe out and pour a cup before it has finished. On a machine without an anti-drip valve that means hot coffee continuing to drip from the basket onto the hotplate, where it burns, smells and has to be cleaned off. The anti-drip system closes the valve the moment the carafe is removed and reopens it when the carafe goes back. You get the first cup early, and nothing lands on the plate. One honest note: coffee poured mid-brew is not the same as the finished pot — the first part of a brew is stronger and the later part weaker, so an early cup runs stronger than the average. Useful to know rather than a fault, and worth pouring back a little if you want it even.
Getting a decent cup out of it — grind, dose and freshness
A drip machine gives you back roughly what you put in, and three things decide the result far more than the machine does. Grind: drip wants a medium grind, roughly the texture of coarse sand. Too fine and the water passes slowly and pulls out bitterness; too coarse and it runs through fast and tastes thin and sour. Dose: a reasonable starting point is around 10 grams of coffee for every 180 ml of water, then adjust to taste — most weak-coffee complaints are simply not enough coffee. Freshness: ground coffee goes flat within a couple of weeks of opening, and that is usually the real reason a cup tastes dull. Beyond that, use filtered water if your supply is hard, and rinse the filter and carafe after each pot — old coffee oils turn rancid and taint the next brew more than anything else on this list.
