The two-tier design is what separates this from a pan with a lid, and it's worth understanding before you buy. Steam rises through both baskets, so two entirely different things cook at the same time in the same cycle — momos in one tier and vegetables in the other, idlis below and beans above, fish in one and rice in the other. Because they sit in separate baskets, flavours don't run into each other the way they do in a single pot. One practical note worth knowing: steam is hottest at the bottom, so the lower tier cooks slightly faster. Put the denser things — potatoes, carrots, eggs, anything thick-cut — in the lower basket, and the delicate ones like leafy greens or fish on top. Get that order right and both come out ready together. The tiers also stack down into each other for storage, which matters in a small kitchen.
Dry run protection — the feature that decides whether it survives
Every steamer works by boiling a reservoir of water, and every steamer eventually runs that reservoir dry because somebody set a long timer and forgot. On a cheap steamer that is how the heating element burns out — the element keeps drawing full power with no water to absorb the heat, and the appliance is dead in a single moment of inattention. Dry run protection cuts the power when the water level drops too low, and the auto-off does the same when the timer ends. Together they mean the commonest way a steamer dies simply doesn't apply here. The water level markings on the outside are the other half of it — you can see where you stand before starting a long cycle rather than opening the lid and letting all the steam out. But the better argument is that steamed eggs are easier to peel than boiled ones. Dropping cold eggs into boiling water tends to make the membrane cling to the white, which is why half the shell comes away with the egg. Steam heats the egg more gently and evenly from the outside, and the shells generally come off in larger pieces. You also stop guessing: set the timer for the doneness you want, and every egg in the basket comes out the same, rather than the pan boiling over while you're doing something else. Run them under cold water as soon as the cycle ends — that's what makes peeling easiest of all.
