An ordinary electric kettle has exactly one behaviour: heat at full power until the water boils, then cut off. That's fine for tea and useless for cooking, because anything you actually cook needs to sit below a rolling boil without going cold. Three settings change what the appliance can do. Boil brings water up fast for noodles or eggs. Heat holds a gentler simmer, which is what soup, porridge, oatmeal and pasta need if they aren't going to boil over or catch. Keep warm holds the finished food at temperature while you find a bowl or wait for someone. At 700 W it is deliberately gentler than a 1500 W kettle — slower to boil, but far better behaved when something is actually cooking in it and needs to be watched rather than blasted.
Boil-dry and overheat protection — two separate systems, both worth having
These are the specifications that decide whether the appliance survives a distracted household, and they do different jobs. Boil-dry protection cuts power when there's no water left inside — which is the commonest way any kettle or cooker dies, because someone switched it on empty or let it boil away while doing something else.
