The word sounds like marketing and it is not — it describes exactly how the machine moves, and it is the reason a stand mixer produces results a hand mixer cannot. A hand mixer spins its beaters on the spot, so you have to move it around the bowl yourself and scrape the sides constantly, and anything that escapes to the edge stays unmixed. Planetary action does both movements at once: the attachment spins on its own axis while the whole head travels around the bowl, the way a planet rotates while orbiting. The result is that the beater passes over every part of the bowl rather than just the middle. For a cake batter that means even incorporation without scraping. For roti or bread dough it matters more, because gluten develops properly only when the whole mass is worked consistently — which is exactly what hand-kneading achieves and what a stationary beater does not.

Never put your hands, a spatula or any utensil into the bowl while the machine is running. The attachment moves with considerable force and will not stop for a finger.
