EvenCrisp™ 360° — Instant Pot's patented airflow, and why it means fewer shakes of the basket
Crispness is a heat-contact problem. EvenCrisp™ circulates hot air around the food in a full 360° pattern rather than pushing it in one direction, so the top, sides and underside of every samosa or tikka piece meet the same heat at the same time. In practice that means the batch browns evenly across the basket, the outside crisps while the inside stays tender, and a tray of nuggets or fries comes out the same colour front to back. It is Instant Pot's patented design, and it is the single reason this unit gets deep-fry texture out of a spoonful of oil.

SS304 is the same food-grade stainless steel used in commercial kitchen equipment: non-porous, hard-wearing and unbothered by the acidic side of Indian cooking — tamarind, tomato, lime marinades, vinegar. Because steel does not absorb odours, yesterday's fish tikka does not turn up in today's muffins, and the chamber wipes clean instead of staining. On the outside, the same steel keeps the machine looking like a new appliance on an open kitchen counter years in.
