The grinder is the first flavour-determining component in the whole machine — everything that happens after it can only work with what the grind delivers. JURA's Professional Aroma Grinder is built to hold on to aroma rather than burn it off: burr geometry that keeps heat low during grinding, and a grind cycle roughly twice as fast as a conventional burr grinder, so there is far less time for volatile aromatics to escape into the air between the bean and the brewing chamber. JURA rates the result at 12.2% more aroma, and it holds across the entire service life of the grinder rather than fading. The 6 adjustable grind levels let you match the grind to your beans — a darker Coorg roast opens up on a slightly coarser setting, a dense light roast wants it finer — which is exactly the control a serious coffee drinker in Delhi wants when the beans change with every bag.
P.E.P.® — the Pulse Extraction Process behind a proper ristretto
A short speciality is the hardest drink for an automatic machine to get right. In a 15–35 ml ristretto or espresso, water is in contact with the coffee for only a few seconds — and a constant, unvarying flow simply does not have time to draw out the mid-range compounds that give premium espresso its sweetness, chocolate and caramel. P.E.P.® interrupts that constant flow with precisely timed pulses, brief rises and falls in pressure that gently agitate the coffee bed and bring water into far more even contact with every part of the puck. The extraction window effectively widens without the shot taking any longer, so the same dose of coffee gives you a richer, more aromatic cup. Combined with intelligent preheating, which brings the machine to the correct brewing temperature before the first cup rather than after it, the espresso you pull at 6 AM tastes like the one you pull at 6 PM.
I.W.S. with RFID — built for the water that actually comes out of a Delhi tap
Delhi NCR water is hard — commonly 200–500 ppm of dissolved solids, heavy in calcium and magnesium, whether it arrives from the mains, a borewell or a tanker. Left alone, those minerals become limescale inside the boiler and the brewing circuit. The Intelligent Water System with RFID handles it properly: the JURA CLARIS filter cartridge carries an RFID chip that the machine reads by itself, switching into enhanced filtration mode and routing water through the filter before it ever reaches the brewing circuit. The machine also tracks how many litres have passed through and tells you when the cartridge has reached its capacity, so filter changes are driven by actual usage instead of a date you tried to remember. Less scale, longer intervals between descaling, and water chemistry that lets the coffee taste of coffee.
