In an oven without convection, heat rises and sits — the top browns while the bottom stays pale, and a tray at the back cooks faster than one at the front. Convection circulates the hot air, which is why it gives even heat distribution for baking, roasting and grilling. In practice it means a cake that rises level rather than domed to one side, biscuits that all come out the same colour, and a roast browned evenly all over. If you bake at all seriously, this is the single feature that determines whether the oven works with you or against you — and the stainless steel body supports it with faster, more uniform heating.
Rotisserie — meat that bastes itself as it turns
Roasting on a static rack means turning the meat yourself, and it never browns evenly however carefully you manage it. The rotisserie function automatically rotates meat and poultry, so the surface browns evenly all round while the juices run back over the meat as it turns rather than draining into the tray. That's what gives you juicy results with a proper crust — whole chicken, kebabs, paneer tikka — and it is genuinely not something a flat tray can reproduce.
