Why 19 bar — the physics of espresso pressure and crema formation
Espresso is defined by high-pressure water extraction — the Specialty Coffee Association (SCA) specifies 9 bar (approximately 9 atmospheres) as the optimal extraction pressure at the coffee puck. At 9 bar, water is forced through the compacted coffee at a rate that dissolves the correct proportion of soluble compounds (sugars, acids, lipids, melanoidins) in the 25–30 second extraction window to produce balanced espresso. Below 6 bar, water flows too freely through the grounds, under-extracting and producing a thin, sour shot without crema. The critical aspect of crema — the golden-brown foam layer that distinguishes espresso from all other coffee preparations — is that it consists of CO₂ bubbles supersaturated in espresso emulsion under extraction pressure. At 9 bar, CO₂ dissolved in the coffee oil emulsion remains in solution; when the pressurised espresso exits the portafilter into atmospheric pressure (1 bar), the CO₂ rapidly comes out of solution and forms the micro-bubble foam structure of crema. Higher pump pressure (9+ bar) produces more complete CO₂ supersaturation and more abundant, denser crema. The Nespresso Pixie's 19-bar pump generates pressure at the water reservoir — this is the system pressure, not the extraction pressure at the capsule. The capsule's aluminium foil puncture resistance, the compaction of ground coffee inside the capsule, and the filter at the capsule exit create backpressure that reduces the effective extraction pressure to the optimal 9-bar range at the coffee. The 19-bar pump specification therefore indicates the pump's capability headroom above the optimal extraction pressure — ensuring 9 bar is maintained at the coffee throughout the extraction cycle even as flow rate varies, rather than the pump struggling and dropping below 9 bar mid-shot as occurs with underpowered pumps.
Nespresso capsule system — what hermetically sealed aluminium capsules do for coffee quality
Coffee's primary enemies after roasting are oxygen, moisture, light, and time. Ground coffee exposed to air loses a measurable fraction of its aromatic volatile compounds within minutes — the fragrance that rises from freshly ground coffee is those volatile aromatics leaving the coffee permanently. Within 15 minutes of grinding, measurable aroma loss occurs; within 2 hours, significant degradation affects cup flavour. This is the fundamental reason specialty coffee shops grind to order immediately before brewing. The Nespresso Grand Cru capsule addresses this through hermetic sealing: ground coffee is filled into an aluminium capsule under nitrogen atmosphere (which displaces oxygen) and the capsule is sealed immediately, preserving the aromatic state of the coffee at the moment of manufacture. Aluminium provides an absolute barrier to oxygen, moisture, and light — unlike plastic packaging, aluminium has zero gas permeability. This sealed environment maintains freshness for 12–14 months on the shelf. The aluminium capsule is also the reason Nespresso achieves consistent extraction quality that would be impossible with a user-loaded portafilter: the coffee dose, grind size, compaction pressure, and bed geometry are fixed by Nespresso's manufacturing process — variables that a home barista must learn and practice to control consistently. Each capsule delivers the same dose at the same grind at the same compaction every time — the only variable is the water temperature and pressure provided by the machine, which the Pixie controls automatically.
