Pulp is the thing everyone in a household disagrees about, and most juicers give you no say in it — you get whatever the fixed sieve produces, then strain it out or stir it back in by hand. The adjustable sieve settles it properly: turn the selector to the level you want before you start, and the juice comes out that way. Press half an orange onto a fixed reamer and the fruit tends to turn with the cone, so a surprising amount of juice stays locked in the pulp. Two-way rotation solves it mechanically: the cone reverses direction so the flesh is worked in both directions and broken down far more thoroughly, extracting up to 80% of the available juice. Two cone sizes — because a lime isn't an orange
A single universal cone is always a compromise: too large and a lime sits on top of it without engaging properly, too small and a big orange never gets pressed to the rind.
