Boiling water is right for exactly one drink, and most of what you brew is not it. A rolling 100°C boil is what masala chai wants — the spices and the strong black leaf need it. Delicate green and white leaf, a first-flush Darjeeling, and a careful pour-over coffee all want the water noticeably cooler, because heat that is too high pulls bitterness out of the leaf faster than it pulls flavour. Seven settings mean you pick the one the drink asks for and press once, instead of boiling, waiting, guessing and pouring at whatever temperature the kitchen happens to leave you with. And when you are brewing across a slow morning, Keep Warm holds your chosen temperature for 20 minutes — the second cup starts exactly where the first one did.
Enamelled stainless steel in Glossy Black — SMEG's 50's Retro finish, properly done
The body is enamelled stainless steel: a vitreous enamel fired onto a stainless steel shell. That is what gives the KLF04BLEU its depth of gloss — a black that reads as lacquered rather than painted, and holds that look under kitchen light. The enamel surface is hard and chemically inert, so it does not take on stains, does not hold odours, and shrugs off the mild cleaners you would use on any kitchen appliance; a wipe with a damp cloth restores the shine. Underneath it is stainless steel, which is what carries the structure. Add the chrome detailing on the handle, lid and base that SMEG has used since the 50's Retro line began, and you get an appliance that belongs on the counter rather than in a cupboard — in a Delhi flat where the kitchen is open to the dining room, that matters.
Removable steel filter — precision that survives Delhi's water
Delhi NCR water is hard, and on borewell or tanker supply harder still, so limescale is the thing that quietly changes how a kettle performs.
